Sushi - South of the Border

I learned to love sushi while living in South America, of all places. South America has some amazing sushi. It's not that surprising really; there is a significant Japanese population here, and the coastal cities have fantastic seafood. Sushi is quite popular in cities such as Lima and Buenos Aires.

South American sushi chefs are inventive, taking liberty with the traditional rolls and incorporating Latin flavors. You can find sushi with ingredients such as ceviche and criollo sauce. I once had a sushi roll filled with lomo saltado (a Chinese/Peruvian beef stir fry) and it was incredibly good. OK, maybe that's going too far... but even if it wasn't true sushi, it was great. My favorite South American sushi roll is the tropical roll, an exotic mix of mango, fried shrimp, and avocado, and served with (this is what makes it special) a tangy passion fruit sauce. I like it so much that I had to learn how to make it at home, and it's not hard. Try it - you might come up with an even better combination.
