Potato Wars

Peru and Chile have had many disputes (and a war) over the years, but their most recent spat revolves around the humble potato. As recently reported in this New York Times article, both Peru and Chile adamantly claim that the world's first potatoes grew on their national soil. Potatoes are trendy right now - the United Nations has declared 2008 the International Year of the Potato and everyone wants to be in on the potato craze.

Whatever their origin, there's no doubt that potatoes are an amazing food, and there are so many great ways to enjoy them in South American cooking. This recipe for Causa Rellena con Pollo, (yellow potatoes seasoned with lime and chile peppers and layered with chicken salad) is one of my favorites.
