Papapan - Potato Bread
Even if you don't speak Spanish, the word "papapan" just sounds great. Papa means potato and pan means bread, so maybe native Spanish speakers don't find the word quite as fascinating as I do. But everyone can agree that potato bread itself has many advantages.
Here in Peru, as in the rest of the world, the price of wheat has risen dramatically. Since Peru imports its wheat flour, and since just about everyone in Peru eats bread, this price increase is causing hardship. The Peruvian government is promoting the use of potatoes to make bread. Replacing a third or so of the wheat flour with mashed potatoes or potato flour results in a soft, tasty bread that keeps really well and is 6 percent cheaper, according to this International Herald Tribune article. It just so happens that my favorite recipe for cinnamon rolls uses both mashed sweet potatoes and regular potatoes. The potatoes help the cinnamon rolls stay tender and soft.
