
Arroz Jardinero (garderner's rice) is a wonderful summer recipe for when the garden is full of produce. Corn, squash, bell peppers, tomatoes, eggplant - whatever you have in your backyard or whatever you find at the farmer's market will go well in this recipe. Sautéing some garlic in oil at the beginning gives the rice great flavor. I love to have this for lunch in the summer - it's a meal in itself. But it makes an excellent side dish too.
