This is an interesting article (from the website Living in Peru) about an amazing ceviche chef from Lima, Chef Javier Wong. He has a small but famous restaurant in the front room of his house, and is considered a kind of 'ceviche master' by people in the know. You can watch a video of him in action here, as he quickly turns a large flounder and some octupus into the lime and hot pepper seasoned seafood salad called ceviche.
