Salchipapas - Hot Dogs and Fries

I met someone the other day who had grown up in Peru. As always happens, she wanted to know what we thought of the food while we lived there, and went on to speak passionately about all her favorite Peruvian dishes. Salchipapas was at the top of her list, which surprised me, because it's really just hot dogs and fries. But it's street food that has a certain greasy, irresistible taste (like New York-style pizza or Philly cheesesteak) that's difficult to replicate at home.

I found a wonderful description of salchipapas with great recipes (including the spicy sauce that goes with them) at Laylita's Recipes, an excellent blog about South American food with a focus on Ecuador.
