If you live in Miami, there are still a couple of days left to sample a "Taste of Perú" at the Miami Beach Convention Center. I learned something interesting about the history of the famous Peruvian roasted chicken (pollo a la brasa) from this article about the Miami food festival. Apparently two Swiss expatriates in Lima popularized the dish in the 1950's, at their restaurant La Granja Azul (which is still a popular Lima restaurant), and they also patented the mechanical spit that roasts multiple chickens simultaneously (el rotombo).
