Chifa - Peruvian Chinese Fusion

Chifa is a popular cuisine in Peru, an interesting combination of South American creole food and Chinese cooking. The Chinese-creole combinations in chifa restaurants can be surprising, like finding yellow Andean potatoes in your stir-fry. (Lomo saltado, a beloved Peruvian meal, is a stir-fry of steak and french fries, served over rice.)  The Peruvian-style fried rice called arroz chaufa is another favorite chifa dish.

Japanese-Peruvian fusion is also very trendy in Peru, with many restaurants serving innovative sushi rolls featuring local ingredients. Often these Asian-Latin fusion dishes are seasoned with  Peruvian chile peppers like aji amarillo and aji panca.
