Ash Wednesday marks the beginning of the Lent (Cuaresma in Spanish), the period before Easter during which many Catholics (and others as well) engage in fasting and refrain from eating meat, opting for seafood and vegetarian dishes. Many of the traditional dishes served during Lent in Latin America are of Spanish origin, and this is the only time of year when vegetarian empanadas (empanadas de vigilia) take center stage.
