It's easy (and quick) to make your own beef jerky (carne seca) - in the microwave! It's the same concept as cooking bacon in the microwave, only taken a bit further: strips of marinated beef are zapped several times until they have lost all of their moisture and become leathery and dry. The marinade for this carne seca is the same as the marinade for Peruvian-style beef anticuchos, with aji panca chile pepper playing the star ingredient role, and garlic, vinegar, salt and pepper as back up flavor enhancers.
