This nutritious and very tasty bread combines three traditional ingredients from Latin America - potatoes, quinoa, and chia seeds. The potatoes keep the bread soft, the quinoa adds protein and nutty flavor, and the chia seeds add more protein and other nutritional benefits, as well as an attractive, crunchy decoration for the top of the bread.
I like to make this dough into rolls, but you can also shape it into a loaf. This bread was a hit with everyone in our family, including those who are not big health food eaters and normally stick to white bread.
