
I just added this grilled chicken salad recipe to this website yesterday, and my sister-in-law has already made it and tested it out! She sent these pictures from their dinner last night. She didn't have all of the ingredients and substituted a few things, but judging by the photos, it was a hit. (She likes to use Instagram for photos - can you tell?)

Now she is wondering what to make with the leftovers. The grilled chicken would be very good shredded, mixed with some mayonnaise and avocado (and/or pineapple), and stuffed into a split arepa (cornmeal griddlecake). Or serve the grilled chicken over coconut rice with some mango salsa (or substitute pineapple for the mango, if you have pineapple leftover as well).
