These soft and chewy oatmeal coconut bars are addictive. They have the same trifecta of flavors (toasted coconut, caramel and chocolate) as my favorite girl scout cookies, Samoas. I use butterscotch caramel sauce from a jar to make these, but dulce de leche would work well too.
