
Empanadas are South American pastries - in same category as calzones, samosas, and cornish pasties. There are many different kinds of empanadas, usually filled with savory things like cheese, chicken, seafood, etc. The most typical filling is seasoned ground beef. But vegetarian empanadas can be delicious when done right, like these empanadas filled with sautéd kale, broccoli, bell peppers and onions. Tofu, cheese, or hard boiled eggs fill in for the protein.
Make these empanadas with "light" empanada dough (in which yogurt stands in for the vegetable shortening and/or lard) if you prefer to avoid the large amount of shortening in traditional empanada dough.
