Hector Rodriguez, About.com's guide to Latin Caribbean Food, has an interesting article about Caribbean curries - how they vary by region, where they came from, and what goes into the various spice mixtures. Curries are not as prominent in South American cuisine, but there is a similar culture of seasoning with traditional mixtures of spices and flavors.
