Tropical Sushi Roll - Japanese/South American Fusion Roll

This unusual sushi roll has mango, cream cheese, and fried shrimp or salmon on the inside. It's draped with a thin layer of avocado on top, and then drizzled with a tart and savory passion fruit sauce. It's a delicious combination of flavors that represents the creative mixture of Japanese and Peruvian cuisine in Peru.

Prep Time: 1 hours, 00 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 recipe sushi rice (see "Related Video Recipes")
  • 1 recipe fried shrimp (see "Related Recipes")
  • 1 avocado
  • 1 mango
  • 8 ounce block of cream cheese
  • 1/4 cup passion fruit sauce (see "Related Recipes")
  • Black sesame seeds

Preparation:

  1. Prepare sushi rice.

  2. Prepare fried shrimp.

  3. Peel and cut mango into strips about 1/2 inch wide. Peel and cut avocado into very thin slices. Sprinkle avocado with lemon juice.

  4. Cut block of cream cheese into 1/2 inch strips.

  5. Assemble sushi rolls with strips of cream cheese, mango and fried shrimp on the inside. Layer thin slices of avocado over the roll, and sprinkle with black sesame seeds. Drizzle with passion fruit sauce, and serve extra sauce on the side.

Makes 15-20 pieces, depending on size.

Tip: If you can't find ripe avocados, top sushi rolls with thin slices of mango. If you can't find mango, you can substitute with peaches or pineapple. Smoked salmon works well in place of the shrimp, or you can put both salmon and shrimp in the roll and omit the cream cheese.
