A Holiday Menu of South American Dishes

Although Thanksgiving is not celebrated in South America, many traditional Latin holiday dishes use the same harvest ingredients featured in most Thanksgiving menus. Pumpkins, sweet potatoes, squash, and corn are all widely celebrated in South American cooking. Enjoy this menu featuring a beautiful centerpiece dish of beef stew served in a roasted pumpkin bowl, accompanied by a Peruvian version of scalloped potatoes (papa a la huancaína), quinoa and cranberry pilaf, Paraguayan cornbread, and tres leches cake for dessert.
