Ingredients:
- 1-2 passion fruits (or 1/4 cup passion fruit juice)
- 1/4 cup vinegar
- 3/8 cup sugar
- 1 clove garlic, crushed
- Salt to taste
Preparation:
- Cut passion fruits in half and scrape pulp into a microwave safe bowl. Heat in microwave 30 seconds.
- Strain pulp through a fine mesh sieve, pressing with a spoon to extract all of the pulp and juice from the seeds. Discard seeds and reserve juice.
- To make passion fruit sauce, place passion fruit juice, vinegar, sugar, and garlic in a saucepan and bring to a boil.
- Boil for about 5 minutes, until sauce reduces and thickens.
- Remove from heat and season with salt to taste.
- Store sauce in refrigerator for 1-2 weeks.
