Salsa de Maracuyá - Passion Fruit Sauce

This passion fruit sauce is one of my favorite recipes. It's easy to make and goes well with so many different dishes. Try it brushing over grilled chicken, and then serve the chicken with mango salsa and rice. It's excellent drizzled over tropical sushi rolls. You can also omit the garlic and use this as a dessert sauce.

Prep Time: 15 minutes

Cook Time: 5 minutes

Ingredients:

  • 1-2 passion fruits (or 1/4 cup passion fruit juice)
  • 1/4 cup vinegar
  • 3/8 cup sugar
  • 1 clove garlic, crushed
  • Salt to taste

Preparation:

  1. Cut passion fruits in half and scrape pulp into a microwave safe bowl. Heat in microwave 30 seconds.

  2. Strain pulp through a fine mesh sieve, pressing with a spoon to extract all of the pulp and juice from the seeds. Discard seeds and reserve juice.

  3. To make passion fruit sauce, place passion fruit juice, vinegar, sugar, and garlic in a saucepan and bring to a boil.

  4. Boil for about 5 minutes, until sauce reduces and thickens.

  5. Remove from heat and season with salt to taste.

  6. Store sauce in refrigerator for 1-2 weeks.
